Welcome to the first episode of Munchies for Morons! In this video I made a super easy veggie crockpot chilli. Hearty soups are some of my favorite comfort foods to make and a veggie chilli is one you can eat year round. It’s full of flavor, it's filling, and you won’t have a food hangover!
Main Ingredients:
4 tbl sp olive oil or avocado oil
½ lb Veggie ground “beef”
1 cup chopped carrots + celery
3 tbl sp garlic ½ cup chopped onion ½ cup chopped fresh jalapenos (remove seeds to keep it mild)
2-4 cups veggie broth
1 cup fresh/frozen corn
1 15 oz can black or pinto beans
1 15 oz can diced tomatoes (add fresh as well if you need to use them up!)
2 tbl sp tomato paste (or 1 small can)
Seasoning: 2 tsp of your favorite taco seasoning- I love NayNay’s Tacos seasoning (look em up!)
2 tsp chilli powder (or to taste) Salt + pepper (add as you go as needed)
Favorite hot sauce to taste
Fresh squeezed lime to taste
Topping ingredients:
Cilantro to taste more fresh squeezed lime (if you love it as much as I do)
1 TBL sp plain yogurt (instead of sour cream)
2 slices avocado + handful of your favorite corn/tortilla chips
Your favorite cheese
Instructions: In the crockpot: Add your oil and onion to your pot or crockpot first, followed by the chopped garlic. or add the rest of your ingredients to the crock pot and let it all cook together for about 3 hours. In a pot on the stove: Sautee your onion first and then garlic in your oil until golden brown. Sautee the rest of your veggies for about 5 minutes continuously stirring. Add the rest of your ingredients and let simmer on medium to low for 30 minutes or until veggies are fully cooked. Keep tasting and adding seasonings as needed. This is a very forgiving recipe! Add other veggies you might have around like mushrooms, extra cilantro, red peppers, zucchini etc. Add your seasonings and jalapenos to how mild or spicy you like it. Let it cool a little and add any favorite toppings.
